It is surprising how an adverse reaction to a single ingredient can change the lives of so many people. For example, those who suffer from celiac disease, known to be the most common, undiagnosed, and serious intestinal disease in the US, can never get to taste products which contain gluten. These include cereals and other foods that contain gluten as additives or a thickening agent. For these people, avoiding gluten is essential; else they suffer the pain or discomfort brought upon by their condition. That is why it is crucial for them, and others who should not have gluten in their systems, to have a gluten free food list. Arming themselves with knowledge of what food to avoid and what food they can eat can spell the difference between having an uncomfortable or painful experience.
The term “gluten free food” means that the food does not contain any amount of gluten, a protein composite which can be found in most grains. One will find that a gluten free food list does not contain anything that has a form of cereal in it, may it be wheat, barley, or rye. However, grains and starch replacements are available in the form of rice, potatoes, and tapioca.
A gluten free food list will also have a list of foods such as meat, fish, shellfish, poultry, vegetables, herbs, and more. These are generally free of gluten, that is, when they are eaten fresh and are unprocessed. If foods are said to be gluten free, but have undergone some form of processing, they are still not safe to eat for people who have gluten based conditions.
Even if one has obtained a gluten free food list, it can only go so far. One should always check labels of the food that one buys. Even if a label says gluten free, it is still important to always read the ingredient list of the foods, just in case. When planning to eat out, one can consult the Internet for the nearest restaurant that offers gluten free meals. For people who cannot tolerate gluten, vigilance is the only way that they can avoid the grief brought about by eating food with gluten.
